Life really can be a picnic!

Everyone loves a picnic! This blog is about some of the things I love the most, and the term "picnic" just about covers them all. First of all, a picnic has to include food; simple food that is easy to fix. Next, you need someplace fun or different to visit; a nice, peaceful location. And of course, you always need to take along a good book to read and a well-used quilt to spread everything out on. So, there you have it! Easy recipes, good books, fun quilts along with some interesting, down-to-earth places to visit. You can even take your family or a friend or two if you want.

The Simple Life

  I spent this past week with my sisters.  We flew to Denver, Colorado and took the Amtrak train back home again. It was so fun being with my sisters.  I even got to go to a few quilt shops and a quilt museum.  Here are some pics from Holly's Quilt Cabin.  It was my favorite of the shops we visited.






















     The Amtrak train from Denver to Salt Lake City follows the Colorado River for a good portion of the way.  There were some amazing views.





  I love mushroom soup.  It's one of many comfort foods.  I made up this recipe combining ingredients from several recipes that I found on line.




Hearty Mushroom Soup
4 cups chicken or vegetable broth
2-3 medium potatoes, peeled and diced
1 medium carrot, sliced
2 Tbsp. butter
1 medium onion, finely diced
8 oz. white mushrooms, sliced
8 oz. cremini mushrooms, sliced
½ tsp. thyme
2 bay leaves
3 Tbsp. flour
2 cups half and half
½ Tbsp. Mrs. Dash or Seasoning salt
Salt and pepper to taste
Parsley flakes
Boil potatoes and carrots in broth until tender in a large pot.  Meanwhile saute onion and mushrooms and continue to cook until vegetables are soft. Add to the large soup pot. Add thyme and bay leaves.
Whisk flour into half and half until blended.  Gradually add to the soup pot stirring until thickened.  Add salt and pepper to taste.  Makes 4-6 servings.

I finished reading this book a few weeks ago.  I love old fashioned books that have no cussing and no inappropriate scenes.  I guess I'm just a little old fashioned myself.  Nothing wrong with that.
