These pictures are from the quilt show at the Springville Museum of Art that was held in August and September. The quilt show there never disappoints. I love going there each year!
I love the fall because that is the time when we all want to have a nice warm bowl of soup. I put soup on the menu this time of year at least once a week. Here is one I tried recently that turned out pretty well.
White Bean and Ham Tortellini Soup
2 Tbsp.
butter
1 Tbsp.
olive oil
½ large
onion, chopped
2 carrots,
thinly sliced
3 stalks
celery, chopped
4 garlic
cloves, minced
6 cups
chicken broth
1-2 cups
cooked ham, diced
1 (15 oz.)
can cannellini beans, rinsed and drained
1 Tbsp. Dijon
mustard
2 bay leaves
1 tsp. dried
parsley
½ tsp.
oregano
½ tsp. dried
thyme
¼ tsp. cumin
¼ tsp. smoked
paprika
¼ tsp.
pepper
2-4 cups
uncooked cheese tortellini
Melt butter
in olive oil in large soup pot over medium heat. Add onions and saute for 2 minutes. Add carrots and celery and cook, while stirring,
for 3 minutes. Add garlic and saute for
30 seconds.
Turn heat to
low and gradually stir in the chicken broth.
Stir in ham, beans, Dijon mustard, bay leaves, and all seasonings.
Bring to a
boil; cover reduce to a gentle simmer for 15 to 20 minutes or until vegetables
are tender.
Add
tortellini and boil for 1-2 minutes or until cooked al dente.
Serve soup
garnished with parmesan cheese if desired.
Makes 6-8 servings.
