Life really can be a picnic!

Everyone loves a picnic! This blog is about some of the things I love the most, and the term "picnic" just about covers them all. First of all, a picnic has to include food; simple food that is easy to fix. Next, you need someplace fun or different to visit; a nice, peaceful location. And of course, you always need to take along a good book to read and a well-used quilt to spread everything out on. So, there you have it! Easy recipes, good books, fun quilts along with some interesting, down-to-earth places to visit. You can even take your family or a friend or two if you want.

Tulip Festival

  Last weekend my husband and I attended the Tulip Festival at Thanksgiving Point in Lehi, Utah.  We saw thousands of beautiful flowers, not just tulips.  We had fun driving around in a rented golf cart and admiring our beautiful surroundings.



































 




























































 
I finished this quilt just this past weekend. But I started it a few years ago and put it away because I didn't really like it.  In fact, I nicknamed it "The Ugly Quilt".  I decided to have another go at it and once I put the outer borders on it, I liked it much better. 
 








 


     Since warmer weather is on it's way, I decided to add a recipe that requires no oven.


 

Greek Tuna Salad

1 (5 oz.) can tuna in water, drained and flaked
1/2 cucumber, peeled and finely chopped
¼ cup crumbled feta cheese
½ cup sliced black or kalamata olives
1/3 cup Greek yogurt
½ tsp. dried dill weed
½ tsp. garlic powder
1 Tbsp. Greek or Italian dressing
Salt and pepper to taste
1 tomato, chopped
½ avocado, diced
Romaine lettuce
Pita bread

Place tuna, cucumber, feta cheese and olives in medium bowl.  Mix together yogurt, dill weed, garlic powder, dressing and salt and pepper.  Combine dressing mixture with tuna mixture and stir until combined.  Add tomato and avocado and lightly stir to mix.  Put tuna salad on pita bread with romaine lettuce and serve immediately.

I finished reading this book last weekend.  It was a powerful story of a mother's loss and her journey to find peace and forgiveness after her daughter was killed in the Sandy Hook shooting.
