Some of the most fun days in early Spring are those spent flying kites with the kids and grandkids.
Lemon is one of my favorite flavors of Spring. Here are a couple of recipes that utilize that great flavor, ones that my family loves.
Tortellini Spinach Bake in Creamy Lemon Sauce

12 oz. bag Barilla Cheese & Spinach Tortellini
4 strips bacon 1
½ tsp. dry basil
3 cloves garlic, finely minced ¼ tsp. red pepper flakes
2 T flour 1
medium lemon
2 cups milk 2
cups spinach, roughly chopped
¾ tsp. salt ¾
cup grated mozzarella cheese
1/8 tsp. pepper ¾
cup grated parmesan cheese
Preheat oven to 350 degrees.
Cook tortellini according to package directions. Cook bacon until crisp
in a medium skillet until crisp. Remove bacon from pan and cook garlic in pan
drippings for about 1 minute. Add flour
to pan and whisk for about 1 minute. Slowly add milk and whisk until
smooth. Add salt, pepper, basil and red
pepper flakes. Bring sauce to a simmer.
Add 2 tsp. lemon zest and 1 T lemon juice to sauce. Stir for
2-3 minutes or until thickened. Remove from heat. Put drained tortellini back
in pot it was cooked in. Add crumbled and cooked bacon to pasta except for 1 T.
Add spinach, ½ cup mozzarella and ½ cup parmesan cheese. Add sauce and gently
stir to combine. Place pasta in an 8x8 or 9x9 baking dish and top with
remaining ¼ cup mozzarella and parmesan cheese and crumbled bacon. Cover with
foil and bake for 20 minutes. Remove foil and bake for 5-10 minutes more or
until cheese on top is melted and pasta is bubbly throughout. Serves 4-6.
Lemon Bars
This recipe comes from Ina Garten and the Food Network
Yield:
20 squares
For the crust:

2 sticks butter, softened
·
1/2 cup granulated sugar
·
2 cups flour
·
1/8 teaspoon salt
For the filling:
·
6 extra-large eggs
·
3 cups granulated sugar
·
2 tablespoons grated lemon zest
·
1 cup lemon juice
·
1 cup flour
·
Powdered Sugar, for dusting
Instructions
1.
Preheat oven to 350ºF.
2.
Line a 9x13 pan with foil or
parchment, and lightly spray with non-stick cooking spray.
3.
Cream together the butter and sugar.
Mix in the flour and salt until dough forms.
4.
Press the dough into the pan,
building up 1/2 inch crust on all sides.
5.
Bake the crust for 15-20 minutes or
until lightly golden brown. Chill.
6.
Whisk together all of the remaining
ingredients (except the powdered sugar), and pour into the cooled crust. Bake
for 30-35 minutes until filling is set. Let cool to room temperature or chill
overnight.
7.
Dust with powdered sugar before
cutting and serving.
