My husband and I just returned from a two week road trip. The beginning of the trip took us through Wyoming and proceeded on to North Dakota. We were especially interested in going to North Dakota so we could cross another state off our list of "the 50 states that we hadn't visited yet". I had also just finished reading a historical fiction book about the settling of North Dakota and how Theodore Roosevelt visited that area and hunted there frequently. We went to the Theodore Roosevelt National Park in Medora, North Dakota and were able to see his log cabin where he stayed. We also saw a home that was mentioned in the book called the Chateau de Moore. It was built by a French man, who is also mentioned in the book.
It has been such a hot July so far, so I have been looking for recipes that appeal to me on these hot days. This is one we had for dinner recently that we enjoyed.
Turkey Lettuce Wraps
1 Tbsp.
olive oil
1 yellow
onion, diced
2 cloves
garlic, minced
Mushrooms,
finely chopped
20 oz. lean
ground turkey
Salt and
pepper to taste
½ tsp.
ginger
2 Tbsp. soy
sauce
Sriracha
sauce to taste, start with ¼ tsp.
1 (8 oz.)
can sliced water chestnuts
Lettuce
leaves (Boston Bibb, butter, or iceberg)
Toppings:
Shredded
carrot
Cilantro
Peanuts
Crunchy rice
noodles
Sliced green
onions
Peanut satay
sauce
Heat oil in
a large frying pan. Cook onion and
garlic until slightly soft. Add mushrooms,
ground turkey, salt and pepper and ginger.
Cook until turkey is almost completely done. Add soy sauce, water chestnuts and sriracha
sauce. Continue to cook and stir until all ingredients are combined and hot.
Spoon turkey
mixture in lettuce leaves (two leaves work great) and sprinkle toppings of
choice on top. Drizzle with peanut
sauce.
Here are the first two books in the Dakota Treasures series that I finished reading. I have so enjoyed learning about the early days of Medora, North Dakota. I have also enjoyed the strong female characters and how they dealt with facing new adventures. There are 4 books total in the series so these are the ones I will be reading next.
