Life really can be a picnic!

Everyone loves a picnic! This blog is about some of the things I love the most, and the term "picnic" just about covers them all. First of all, a picnic has to include food; simple food that is easy to fix. Next, you need someplace fun or different to visit; a nice, peaceful location. And of course, you always need to take along a good book to read and a well-used quilt to spread everything out on. So, there you have it! Easy recipes, good books, fun quilts along with some interesting, down-to-earth places to visit. You can even take your family or a friend or two if you want.

What Will You Contribute?

     I love the fall because that is the time when we all want to have a nice warm bowl of soup.  I put soup on the menu this time of year at least once a week.  Here is one I tried recently that turned out pretty well.


White Bean and Ham Tortellini Soup
2 Tbsp. butter
1 Tbsp. olive oil
½ large onion, chopped
2 carrots, thinly sliced
3 stalks celery, chopped
4 garlic cloves, minced
6 cups chicken broth
1-2 cups cooked ham, diced
1 (15 oz.) can cannellini beans, rinsed and drained
1 Tbsp. Dijon mustard
2 bay leaves
1 tsp. dried parsley
½ tsp. oregano
½ tsp. dried thyme
¼ tsp. cumin
¼ tsp. smoked paprika
¼ tsp. pepper
2-4 cups uncooked cheese tortellini

Melt butter in olive oil in large soup pot over medium heat.  Add onions and saute for 2 minutes.  Add carrots and celery and cook, while stirring, for 3 minutes.  Add garlic and saute for 30 seconds.
Turn heat to low and gradually stir in the chicken broth.  Stir in ham, beans, Dijon mustard, bay leaves, and all seasonings.
Bring to a boil; cover reduce to a gentle simmer for 15 to 20 minutes or until vegetables are tender.
Add tortellini and boil for 1-2 minutes or until cooked al dente.
Serve soup garnished with parmesan cheese if desired.  Makes 6-8 servings.
 
 
 
 
     Here's another Josi Kilpack book.  This time it's about the author Harriet Beecher Stowe who wrote Uncle Tom's Cabin.  Even though it's historical fiction, I love learning about the lives of people who came before us who contributed to the world.
