Life really can be a picnic!

Everyone loves a picnic! This blog is about some of the things I love the most, and the term "picnic" just about covers them all. First of all, a picnic has to include food; simple food that is easy to fix. Next, you need someplace fun or different to visit; a nice, peaceful location. And of course, you always need to take along a good book to read and a well-used quilt to spread everything out on. So, there you have it! Easy recipes, good books, fun quilts along with some interesting, down-to-earth places to visit. You can even take your family or a friend or two if you want.

Room on the Table

     Since I have a new sewing room downstairs, I no longer need to spread out my sewing projects on the kitchen table   It was time to make a table runner for the kitchen.  My kitchen is blue and white so this is the quick and easy runner that I came up with.  It was fun to use up some of my small scraps!








     My brother's garden is in full swing.  It has been so nice to go and get all the tomatoes, squash and cucumbers that I want and he's so good to share with me.  I have been eating at least one tomato sandwich each day.  I am also including a delish recipe that my friend, Alexis gave me for fresh salsa.



 





Salsa
1 (28oz.) can tomatoes with juice
2 (10 oz.) cans Rotel (diced tomatoes and green chilies)
¼ cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin
¼ tsp. sugar
¼ tsp. salt
¼ tsp. ground cumin
½ cup cilantro (or more to taste)
the juice of half a lime

Note: This is a very large batch. Recommend using a 12 cup food processor, or you can process the ingredients in batches and then mix everything together in a large bowl.
Combine tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice and cilantro in a blender or food processor.  Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses.  Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour.  Serve with tortilla chips or cheese nachos.
