Since I have a new sewing room downstairs, I no longer need to spread out my sewing projects on the kitchen table It was time to make a table runner for the kitchen. My kitchen is blue and white so this is the quick and easy runner that I came up with. It was fun to use up some of my small scraps!
My brother's garden is in full swing. It has been so nice to go and get all the tomatoes, squash and cucumbers that I want and he's so good to share with me. I have been eating at least one tomato sandwich each day. I am also including a delish recipe that my friend, Alexis gave me for fresh salsa.
Salsa
1 (28oz.)
can tomatoes with juice
2 (10 oz.) cans
Rotel (diced tomatoes and green chilies)
¼ cup
chopped onion
1 clove
garlic, minced
1 whole
jalapeno, quartered and sliced thin
¼ tsp. sugar
¼ tsp. salt
¼ tsp.
ground cumin
½ cup
cilantro (or more to taste)
the juice of
half a lime
Note: This
is a very large batch. Recommend using a 12 cup food processor, or you can
process the ingredients in batches and then mix everything together in a large
bowl.
Combine
tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice and
cilantro in a blender or food processor.
Pulse until you get the salsa to the consistency you’d like—I do about
10 to 15 pulses. Test seasonings with a
tortilla chip and adjust as needed.
Refrigerate
salsa for at least an hour. Serve with
tortilla chips or cheese nachos.
