August is my birthday month. Sometimes I feel like my birthday is a reward for getting through the hot summer. Usually around this time of year there is a quilt show in Springville at the Art Museum there. I love going there as a part of my birthday celebration and this year my husband took the day off work to take me there. Here are some of the beautiful quilts displayed there.
Here's a very simple recipe that uses up the abundance of tomatoes and cucumbers this time of year. It's a very refreshing salad.
Pesto Tomato Cucumber Salad
½ cup
Italian salad dressing
¼ cup pesto
¼ tsp. salt
¼ tsp.
pepper
3 large
tomatoes, quartered and sliced ½” thick
2 medium
cucumbers, peeled and halved lengthwise and cut ¼” thick
¼ red onion,
sliced thinly
Whisk salad dressing,
pesto, salt and pepper. Combine
tomatoes, cucumbers and onion in a medium bowl. Toss with dressing. Makes 6-8
servings.
