Last week our Quilt Guild held a quilt retreat. The theme was "Out of this World UFOs". It was so much fun! We had a make and take each day and a mini class on binding a quilt. One of our members, Marilyn did a trunk show or her mini quilts. We had a very nice meal each day, including the first day when we all went to lunch at a local restaurant. We had lots of free sewing time to complete projects that we were working on and we played some games for prizes. Each day we went home with lots of treats and gifts. The best part of all is making new friends and getting to know each other better.
Since asparagus is now in season and reasonably priced it's a good time to make this for breakfast!
Asparagus Scramble
1-2 tsp.
butter or oil
2 large eggs
1-2 Tbsp.
water
Pinch of
salt
Dash of
pepper
6-7
asparagus spears, woody ends snapped off and cut into bite-sized pieces
1-2 green
onions, sliced
¼ cup
cheddar cheese
Heat butter
or oil in a medium skillet over medium heat. Cook asparagus and green onions a
few minutes or until asparagus is bright green. Crack eggs in a medium bowl and
add water and salt and pepper. Scramble with fork and add to asparagus. Cook until eggs are done to your desire. Sprinkle with cheddar cheese and cook until
melted. Transfer to plates and serve.
Makes 1-2 servings.
Barbara Bush was one of our great first ladies. I read this book quite a few years ago and really enjoyed it. With her passing it brought back thoughts to my mind of this memorable book.
