I got to attend the Utah Quilting and Sewing Marketplace at the South Town Expo Center in Sandy, Utah with my friends, Patti and Karen. We had a wonderful time looking at all the quilts and visiting the vendor's booths.
The hot weather is just around the corner so I've included a recipe for a great summer salad.
Greek Chicken Pasta Salad
12-16 oz.
dry pasta (rotini or bow tie is good)
2 lbs.
grilled chicken breast strips
1 English
cucumber, sliced
1 pint
cherry or grape tomatoes, cut in half
1 can black
olives, cut in half
4 oz.
crumbled feta cheese
Half of a
red onion, cut in half and thinly sliced
1 (16 oz.)
bottle Greek vinaigrette dressing (I used Kraft brand)
Cook pasta according
to package directions. Drain and rinse
with cold water. Add all remaining
ingredients and toss until everything is evenly coated with the dressing.
